It’s time for.. you guessed it… Series Snacks! This week I’m doing Percy Jackson, by the request of Grace @ The Girl Upstairs. If you have a request, comment the name of the book and author!
This week we are making: Ambrosia Squares, Cheese Enchiladas, Nectar, Liquid Chocolate Chip Cookies, & Blue Waffles!
Ambrosia Squares
!ask for help if you can’t use the oven by yourself!

Ingredients:
1 (18.25 ounce) package yellow cake mix
1/2 cup butter, melted
1 egg, beaten
1 (8 ounce) package cream cheese, softened
2 eggs, beaten
1 ½ tbps lemon juice
1 tbsp flour
3 1/2 cups confectioners’ sugar
Recipe:
- Preheat oven to 350 degrees F. Grease and flour a 15 x 10 inch sheet pan.
- Mix together cake mix, butter or margarine, and 1 egg. Press mixture into pan. (It should look like play-doh.)
- In a small bowl, mix together cream cheese, 2 eggs, lemon juice, flour, and confectioners’ sugar. Pour mixture on top of cake mixture.
- Bake for 15 minutes. Reduce temperature to 300 degrees F (150 degrees C), and bake for 25 to 35 minutes or until toothpick comes out clean.
Presentation:
- Sift about ½ cup powdered sugar on top. Cool completely and cut into squares.
Variations:
You can adapt it to however you might imagine the ambrosia squares by adding different ingredients to the cream cheese. Maybe add marshmallow cream, or chocolate, or raspberries, or vanilla extract. Whatever you feel would qualify as “god-food,” you can add.
Cheese Enchiladas:

Ingredients:
2 cups Cheddar and Mozzarella (or Jack) cheese, grated and combined
3 Flour tortillas
3 tbsp Butter
3 tbsp Flour
¾ cup Water
¾ cup Milk
½ teaspoon Salt
¼ teaspoon Pepper
¼ tsp Garlic Powder
1 tbsp Cumin
3 tbsp Chili Powder
1 cup Sour Cream
Optional: Chopped black olives
Recipe:
Nectar

Ingredients:
¼ Cup pomegranate juice
¼ Cup grape juice
½ Cup honey cream
Rose Water (it didn’t say how much)
Recipe:
All you need to do for this is combine all ingredients into a glass and mix well.
Presentation:
Add ice, and it’s ready to drink!
Liquid Chocolate Chip Cookies
!ask for help if you can’t use the stove by yourself!

Ingredients:
1 tablespoon vegan butter
2 tablespoons flour (add an extra tablespoon if you desire a more puddingy texture)
1 ½ cups nondairy milk (the more neutral the flavor the better, unless you desire almond or coconut flavored cookie drink, in which case use the corresponding milk)
2-3 tablespoons brown sugar, to taste
1 teaspoon vanilla extract
¼ teaspoon baking soda
pinch of salt
2-3 tablespoons chocolate chips
Recipe:
Whisk together the butter and flour in a small saucepan over medium-low heat.
Cook for 3-5 minutes. The roux paste should be fragrant but should not be allowed to burn.
Whisk in the rest of the ingredients.
Bring to a low boil and cook for 10-15 minutes, whisking frequently.
Remove from heat when desired consistency is obtained (the nectar will thicken more as it cools).
Presentation:
Allow to cool completely before stirring in the chocolate chips.
Blue Waffles
!ask for help if you can’t use the waffle maker by yourself!

Ingredients:
1 cup self-raising flour
1 egg, beaten
1 cup milk
50g butter, melted
2 tbsp white sugar
2-3 drops of blue food coloring
Recipe:
Mix all the ingredients together and cook according to your waffle maker
